Ritz Chicken

A quick and easy — and I mean quick and easy — casserole-type dish that will please any guests! (Except, perhaps, the lactose intolerant.)

Ingredients

  • 6-8 chicken breasts, boiled and diced
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 T poppy seeds
  • 1 sleeve Ritz crackers, crushed
  • 1 stick of butter, melted

Directions

  1. Preheat oven to 350 degrees.
  2. Mix soup, sour cream, and poppy seeds.
  3. Place boiled, diced chicken in the bottom of a 9 x 13 pan and cover with soup mixture.
  4. Sprinkle crushed Ritz crackers over top and pour on the melted butter. (MORE BUTTER!) :)
  5. Bake for 30 mins — and viola! Dinner!

    I’ve never boiled chicken before…do you just chuck chicken breasts in a pot of boiling water?

    Yes ma’am. It’s a super easy way to cook your chicken when it’ll be flavored later in a recipe.

    Yep, just chuck em in and start boiling the water. When they’re finished, you can take them out and cut them or pull them apart with your fingers (after they’ve cooled — I’ve made that mistake before! Poor fingers..)
