A quick and easy — and I mean quick and easy — casserole-type dish that will please any guests! (Except, perhaps, the lactose intolerant.)
6-8 chicken breasts, boiled and diced
1 can cream of chicken soup
1 cup sour cream
1 T poppy seeds
1 sleeve Ritz crackers, crushed
1 stick of butter, melted
1) Mix soup, sour cream, and poppy seeds.
2) Place boiled, diced chicken in the bottom of a 9 x 13 pan and cover with soup mixture.
3) Sprinkle crushed Ritz crackers over top and pour on the melted butter. (MORE BUTTER!) :)
4) Bake at 350 for 30 mins — and viola! Dinner!

I’ve never boiled chicken before…do you just chuck chicken breasts in a pot of boiling water?
Yes ma’am. It’s a super easy way to cook your chicken when it’ll be flavored later in a recipe.
Yep, just chuck em in and start boiling the water. When they’re finished, you can take them out and cut them or pull them apart with your fingers (after they’ve cooled — I’ve made that mistake before! Poor fingers..)
