Brown Rice Breakfast

I got this recipe from {Plate+Simple} and have been eating it every single day for a couple of weeks now. I’m nowhere near sick of it. Hilary calls it “Everyday Breakfast,” but I think of it as “Every Day Breakfast.” So good, and there are so many possibilities with it.


  • cooked brown rice
  • your choice of fruit (my favorites are blueberries, nectarines, or bananas)
  • your choice of nut butter (my favorite is almond butter)
  • salt to taste
  • cinnamon to taste
  • shredded coconut to taste (optional)


  1. Put a couple of heaping scoops of brown rice in a microwave-safe bowl with a small scoop of nut butter on top.
  2. Microwave the works for about 30-45 seconds to warm.
  3. Sprinkle with a dash of salt and stir until just combined.
  4. Top with your choice of fruit, cinnamon, and coconut.
