Rempel Family Meatloaf

God bless the Rempels and their meatloaf. This stuff hits the spot on a chilly fall night! Double the recipe and deliver half as a mercy meal to a family who could use some extra help and loving.


  • 1 1/2 pounds lean ground beef
  • 1/2 cup crushed buttery round crackers
  • 3/4 cup shredded Cheddar cheese
  • 1 (1 ounce) package dry onion soup mix
  • 2 eggs, beaten
  • 1/4 cup ketchup
  • 2 tablespoons steak sauce


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined.
  3. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth.
  4. Mix the eggs into the meat until evenly combined. (If the mixture seems too dry, add a little water.)
  5. Press into a 9×5 inch loaf pan.
  6. Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center(approx. 45 to 60 minutes).

  1. Variation on this one… 2 lb ground beef, 3/4 C crushed Saltines mixed with some melted butter, cheddar + some parmesan, BBQ sauce instead of steak sauce.

    Sauce for top.. add after 40 minutes of cooking, then cook for 10 minutes more (until meat is thoroughly cooked, of course). 1/2 C ketchup, 1/4 C brown sugar, 2 t BBQ sauce. Eyeball ingredients, no need to measure precisely.

    • Cook up some hash browns on the side and steam a bag of green beans and you have a delicious dinner!
