Creamy Baked Chicken


When Jason and I got married, his aunts and cousins threw me a recipe shower. This one from his Aunt Dianne has become a regular feature in our house. I usually half the recipe and serve it with rice.


  • 8 boneless, skinless chicken breasts
  • 8 slices mozzarella cheese (I often use shredded)
  • 2 cups crushed herb seasoned croutons (I use breadcrumbs)
  • 1/3 cup butter, melted
  • 1 can cream of chicken soup (or cream of whatever-you-have)
  • 1/4 cup water


  1. Place chicken in lightly greased 9×13 pan
  2. Place one slice of mozzarella cheese on each piece.
  3. Mix soup with water and spoon over chicken and cheese.
  4. Sprinkle crushed croutons over soup, and drizzle melted butter over all.
  5. Bake at 350 degrees for 1 hour, uncovered.

  1. I have a recipe like that. Except instead of rice, I use frozen chopped spinach mixed with a little white wine (cooking or other), and maybe a spoonful of sour cream and some red pepper flakes sprinkled on the chicken to spice it up. Nice and easy.
