Swedish Pancakes & Maple Syrup

Both sides of my family are Swedish, so when I was growing up, we just called these pancakes.

Ingredients (Pancakes)

  • 1 1/2 cup milk
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 2 eggs

Directions (Pancakes)

  1. Mix all the ingredients together.
  2. Place 1/4 cup of the batter on a hot, greased flat griddle (I use butter, Mom and Grandma used bacon grease).
  3. Tip the griddle to spread the batter to approximately 7-inch cakes.
  4. Fry quickly until light brown.
  5. Turn pancakes when still wet. The pancakes will be thin.
  6. We roll ours and eat them with brown sugar or butter and syrup or berries and Cool Whip.

Ingredients (Maple Syrup)

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup water
  • 1 teaspoon maple flavoring

Directions (Maple Syrup)

  1. Combine ingredients in a small saucepan and bring to a boil.

  1. Yum, these sound good! Are they like crepes?

  2. They’re similar to crepes, but not quite as thin — and they’re also a little more buttery.
