Chicken Curry

This recipe comes from our friend Andy. I think that after every time he came to visit Charity while they were dating we promptly e-mailed him to ask for the recipe for whatever wonderful creation he had cooked up for us.

4 chicken breast cooked and cubed.
1 can cream of chicken
1 can cream of mushroom
½ to 1 cup mayo
2 tsp lemon juice
¾ tsp or more curry powder
8 ounces of cheddar (4 in and 4 on top)

Mix well and put in a casserole dish. Bake at 375 until boiling.

For community dinner, I doubled this and tossed it all in the crockpot (low for 2 hours maybe?). I tend to like it lighter on the mayo (more toward the 1/2 cup) and heavier on the curry powder (“or more”). And for the crockpot, I added only the chese that goes in and not the extra cheese for on top.
