Easy Breakfast Sandwich

My mom used to make this when we were in a pinch for breakfast. It’s versatile and can be made with whatever is on hand — and it fills you up! :)  Serve with some fruit or yogurt.


  • Breakfast bread (Bagel/Croissant/English muffin)
  • Breakfast meat (turkey/ham/bacon/sausage)
  • 1 egg
  • a little cheese
  • a little butter
  • salt/pepper to taste


  1. Toast your breakfast bread.
  2. Break open egg into a little ramekin or other small, microwavable dish.
  3. Add salt, pepper, and cheese.
  4. Microwave for 30 sec to 1 minute (depending on your microwave).
  5. Butter your toasted breakfast bread, add meat (I do sandwich turkey or ham because its easier) and egg, and serve!

  1. I made this for my kids this morning. It was super quick and they really liked them. Thanks for the idea.

  2. I would be nervous eating “not baked” egg. :( If I am not wrong, would it be not similar to sunny side up just in the microwave and not on the pan?
    But I must try that! Tomorrow may be.
