Renae served blueberry cobbler at dinner awhile back. I couldn’t help but copy her example once I had purchased a large box of blueberries from the store. Blueberry cobbler with homemade vanilla ice cream is so good midsummer.
4 T butter
3/4 C flour
3/4 C sugar
1 t baking powder
1/4 t salt
3/4 C milk
2 C berries
1 T sugar
Preheat oven to 350. Place 8×8 square dish or 9×9 round dish in the oven, add butter and let it melt. Whisk flour, sugar, baking powder and salt in a bowl. Add milk and whisk until smooth. Pour into dish with butter, then add fruit on top. Sprinkle with 1 T sugar. Bake 50-60 minutes and serve warm.
**This recipe adequately fed five adults, no leftovers. I’d suggest doubling it!
